

A Comfy Fav - Broccoli Cheddar Soup
This one is one of my favorites, and super simple to make. Plus, it is full of veggies, so if you don't think too much about all of the cheese in it, you could argue it is really good for you. I mean, your mouth will definitely be arguing about how good it is for you...
Ingredients
1 stick real butter
1 large bag broccoli florets (you can dice them if you want them smaller)
1 large onion, diced
4-5 stalks celery, diced
3 large carrot sticks, shredded
1/2 gallon of half & half
2-3 T chicken bouillon granules
1 large block of velveeta
1 cup sharp cheddar shredded cheese
1T flour or corn starch to thicken
Directions
1. In large soup pan, saute vegetables in butter on medium heat until they are semi-tender.
2. Add half & half, Velveeta, and bouillon granules.
3. Stir continuously (so it doesn't scorch) until everything looks pretty melted together.
4. Mix flour with a cup of water and add to soup (or corn starch as package directions instruct).
5. Stir about 5 minutes.
6. Reduce heat and stir in the cup of sharp cheddar cheese until melted.
